Cherry Risotto: risotto recipe in veg or cheese version. Here's how to prepare an exquisite and unusual risotto with cherries.

Nothing is thrown away from the cherry, not even the stones! Cherry seeds can be used to prepare a good liqueur as we suggest in the final paragraph of this page. Now, however, we will focus on the juicy pulp of the cherry to get ared risottovery tasty.
Cherry risotto recipe
Here are the ingredients needed for four people:
- 400 g of Carnaroli rice
- extra virgin olive oil, just enough - generally 3 tablespoons
- 1 sweet white onion
- dry white wine, just enough - usually half a glass
- vegetable broth, just enough - usually 1,5 lt.
- 300 g cherries (recommended variety, tender cherries)
- salt, just enough
- fresh ground pepper, just enough
The amount of broth depends on the amount of heat you give to the risotto pan. As a guideline, a liter and a half of broth should be enough. Analogous discourse with wine.
How to make cherry risotto
Boil the broth and keep it warm.
Clean the onion and mince it. Fry the onion in a non-stick pan with 2 - 3 tablespoons of oil.
When the onion will bewithered, add the rice and brown it *. When the grains appear almost transparent, pour half a glass of wine over the rice and let it evaporate,
Stir and add two ladles of boiling broth. Stir and let it dry. As the broth evaporates, add it again.
While the rice is cooking, dedicate yourself to the cherries that must be cleaned and pitted **.
Add the cherries to the rice by adding more hot broth. Stir and let the liquid dry once again. Cook the risotto respecting the times indicated on the package of the chosen rice.
In the final stage of cooking, when the rice is still a little liquid, add the salt and a little freshly ground pepper. It is at this stage that, if necessary, also in cheese in the version ofcherry and cheese risotto.
Turn off the heat and put the lid on the pan. Let it rest for 3 minutes before serving.
* In fact, for an optimal result the rice should be toasted in a separate pan, not greased and only when the rice is toasted should it be added to the onion oil!
** If you use a stoner, recover the dispersed sauce and add it to your rice, alternatively, leave it in the kernel collector and use it for the preparation of cherry liqueur.
Risotto recipe with cherries and cheese
In the version of therisotto with cherries and cheese, add 90 grams of Parmigiano Reggiano of which, 50 g grated to add in the final stage of cooking the rice and 40 grams in flakes to be used to garnish the dishes.
How to pit cherries quickly
To pit cherries quickly, you will need a pitter similar to the one used to pit olives. You can buy a cherry stoner on Amazon or in stores that specialize in kitchen utensils.

What to do with cherry stones?
